Description

A quick and easy one-pot meal that combines tender chicken with creamy butter, garlic, and a medley of delicious flavors, perfect for a family-friendly weeknight dinner.


Ingredients

  • 4 pieces of boneless skinless chicken breasts or thighs
  • 4 tablespoons of butter
  • 4 cloves of fresh garlic, minced
  • 1 cup of low-sodium chicken broth
  • 2 tablespoons of honey
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 1 cup of caramelized onions
  • 1 cup of shredded cheddar or Monterey Jack cheese (optional)
  • 2 tablespoons of dried parsley
  • 1 teaspoon of cayenne pepper or hot sauce (optional)
  • 1/2 cup of heavy cream
  • 1 cup of cherry tomatoes and kalamata olives (optional)

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. Melt the butter in a large skillet over medium heat until bubbly and slightly browned.
  3. Add minced garlic and sauté until fragrant.
  4. Toss in the chicken and cook until golden brown and no longer pink inside.
  5. Pour in the chicken broth and bring to a simmer.
  6. Stir in heavy cream and cook until creamy.
  7. Add honey, paprika, and optional spices, cooking until well combined.
  8. Gently fold in caramelized onions and optional cheese.
  9. Stir in cherry tomatoes and kalamata olives, cooking for an additional two minutes.
  10. Remove from heat, stir in parsley, and adjust seasoning as needed before serving.

Notes

This dish is great served over rice, with crusty bread, or paired with a side salad.
