- 4 pieces of boneless skinless chicken breasts or thighs
- 4 tablespoons of butter
- 4 cloves of fresh garlic, minced
- 1 cup of low-sodium chicken broth
- 2 tablespoons of honey
- 1 teaspoon of paprika
- Salt and pepper to taste
- 1 cup of caramelized onions
- 1 cup of shredded cheddar or Monterey Jack cheese (optional)
- 2 tablespoons of dried parsley
- 1 teaspoon of cayenne pepper or hot sauce (optional)
- 1/2 cup of heavy cream
- 1 cup of cherry tomatoes and kalamata olives (optional)
Instructions
- Cut chicken into bite-sized pieces and season with salt and pepper.
- Melt the butter in a large skillet over medium heat until bubbly and slightly browned.
- Add minced garlic and sauté until fragrant.
- Toss in the chicken and cook until golden brown and no longer pink inside.
- Pour in the chicken broth and bring to a simmer.
- Stir in heavy cream and cook until creamy.
- Add honey, paprika, and optional spices, cooking until well combined.
- Gently fold in caramelized onions and optional cheese.
- Stir in cherry tomatoes and kalamata olives, cooking for an additional two minutes.
- Remove from heat, stir in parsley, and adjust seasoning as needed before serving.
