- 2 cups cooked rice
- 2 large tomatoes, diced
- 2 eggs
- 2 tablespoons vegetable oil
- 1 teaspoon soy sauce
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat vegetable oil in a pan over medium heat.
- Add the diced tomatoes and stir-fry for about 2-3 minutes until they are soft and juicy.
- Push the tomatoes to one side of the pan and crack the eggs into the empty space. Scramble the eggs until they’re just set (1-2 minutes).
- Combine the scrambled eggs with the tomatoes, then add the cooked rice.
- Stir in the soy sauce, and season with salt and pepper. Cook for an additional 2-3 minutes until heated through.
- Garnish with chopped green onions before serving.
