Description

A quick and easy one-pot meal that combines flavorful tomatoes, scrambled eggs, and rice for a delicious and comforting dish.


Ingredients

Scale
  • 2 cups cooked rice
  • 2 large tomatoes, diced
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon soy sauce
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Add the diced tomatoes and stir-fry for about 2-3 minutes until they are soft and juicy.
  3. Push the tomatoes to one side of the pan and crack the eggs into the empty space. Scramble the eggs until they’re just set (1-2 minutes).
  4. Combine the scrambled eggs with the tomatoes, then add the cooked rice.
  5. Stir in the soy sauce, and season with salt and pepper. Cook for an additional 2-3 minutes until heated through.
  6. Garnish with chopped green onions before serving.

Can be customized with additional vegetables or proteins.
