Description

A quick and easy one-pot tomato chicken dish, perfect for a busy weeknight dinner that the whole family will love.


Ingredients

Scale
  • 4 boneless and skinless chicken breasts
  • 2 cups diced tomatoes (canned or fresh)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
  3. Toss in the chicken breasts and cook until browned on both sides, around 5-7 minutes.
  4. Stir in the diced tomatoes, chicken broth, basil, salt, and pepper, scraping the bits off the bottom of the pan.
  5. Bring to a simmer, reduce heat, and cover, cooking for 20-25 minutes until the chicken is cooked through.
  6. Serve hot, ideally with crusty bread to soak up the sauce.
