Ingredients

- 4 boneless and skinless chicken breasts
- 2 cups diced tomatoes (canned or fresh)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
- Toss in the chicken breasts and cook until browned on both sides, around 5-7 minutes.
- Stir in the diced tomatoes, chicken broth, basil, salt, and pepper, scraping the bits off the bottom of the pan.
- Bring to a simmer, reduce heat, and cover, cooking for 20-25 minutes until the chicken is cooked through.
- Serve hot, ideally with crusty bread to soak up the sauce.
