Description

A quick and easy one-pot Tortellini Carbonara that your whole family will love, ready in about 30 minutes.


Ingredients

Scale
  • Fresh or frozen tortellini
  • Pancetta (or bacon/turkey bacon)
  • 4 large eggs
  • 1 cup grated Parmesan cheese
  • Salt
  • Pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the tortellini according to package instructions, about 3-5 minutes. Drain and set aside.
  2. In a large skillet over medium heat, cook the pancetta until crispy and golden brown, about 5-7 minutes.
  3. Whisk together the eggs and Parmesan cheese in a bowl until well combined.
  4. Add the cooked tortellini to the skillet with pancetta and stir well.
  5. Remove the skillet from heat and quickly pour the egg and cheese mixture over the pasta, tossing to create a creamy sauce.
  6. Season with salt and pepper to taste.
  7. Serve in bowls, garnished with fresh parsley, while warm.
