Description

A cozy and comforting one-pot dish made with coconut milk and frozen dumplings, ready in just 30 minutes.


Ingredients

  • 1 can Coconut Milk
  • 2 tablespoons Red Thai Curry
  • 3 tablespoons Soyaki
  • 3 cloves Garlic (minced)
  • 2 handfuls Spinach
  • 1 bag Frozen Chicken Dumplings
  • 1 tablespoon Chili Oil Crunch

Instructions

  1. In a large pot, heat the coconut milk over medium-high until bubbling (about 3-4 minutes).
  2. Add red Thai curry and soyaki, stirring frequently for 1 minute.
  3. Add minced garlic and stir constantly for another minute until fragrant.
  4. Add spinach and stir until wilted (2-3 minutes).
  5. Add frozen dumplings and stir to coat. Cook for 5 minutes.
  6. Pour in a splash of water, cover, and reduce heat to medium-low, simmering for 10-12 minutes.
  7. Drizzle chili oil crunch on top before serving.
  8. Serve hot and enjoy!

Notes

Customize with any leftover vegetables or proteins you have on hand. For best results, serve with crusty bread or a salad.
