Instructions

  1. Prepare the Herbed Yogurt: In a bowl, mix the yogurt with minced garlic, a couple pinches of salt, and your freshly chopped herbs. Set aside to let those flavors meld together while you focus on the eggs!
  2. Poach the Eggs: Bring a pot of water to a gentle simmer over medium heat. Crack the eggs one by one into a small bowl, then gently slide each egg into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks still look beautiful and runny.
  3. Prepare the Spiced Butter: While the eggs are poaching, heat the butter and olive oil in a small pan over medium heat. When the butter melts, stir in the paprika and red pepper flakes. Cook while stirring occasionally until fragrant.
  4. Plate Up: To serve, place a generous spoonful of that herbed yogurt on a plate, nestle your poached eggs right on top, and then drizzle with the spiced butter.
