Description
A quick and comforting Turkish dish featuring poached eggs served over herbed yogurt, perfect for a family meal.
Ingredients
Scale
- 4 large eggs
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 teaspoon paprika
- 1 teaspoon red pepper flakes
- Salt and pepper, to taste
- Fresh herbs (like dill or parsley), chopped
- Crusty bread, for serving
Instructions
- Prepare the Herbed Yogurt: In a bowl, mix the yogurt with minced garlic, a couple pinches of salt, and your freshly chopped herbs. Set aside to let those flavors meld together while you focus on the eggs!
- Poach the Eggs: Bring a pot of water to a gentle simmer over medium heat. Crack the eggs one by one into a small bowl, then gently slide each egg into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks still look beautiful and runny.
- Prepare the Spiced Butter: While the eggs are poaching, heat the butter and olive oil in a small pan over medium heat. When the butter melts, stir in the paprika and red pepper flakes. Cook while stirring occasionally until fragrant.
- Plate Up: To serve, place a generous spoonful of that herbed yogurt on a plate, nestle your poached eggs right on top, and then drizzle with the spiced butter.
- Dig In: Serve warm with crusty bread for dipping.
