Description

A quick and easy Turkish Gozleme recipe that comes together in about 30 minutes, perfect for a fun and delicious weeknight dinner.


Ingredients

  • 1 cup lukewarm water
  • 34 tablespoons milk
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 500 grams fresh spinach, thoroughly washed and well-drained
  • 2 medium onions, diced
  • 1 teaspoon hot red pepper flakes
  • 1 teaspoon black pepper
  • Salt (to taste)
  • 200 grams Turkish white cheese (like feta, optional)
  • 3 tablespoons butter and/or vegetable oil

Instructions

  1. In a large bowl, combine lukewarm water, milk, salt, and flour. Mix until a shaggy dough forms, then knead for 5-7 minutes until smooth and elastic. Let it rest for 15 minutes.
  2. In a skillet, sauté diced onions in a splash of water over medium heat until translucent (about 5 minutes). Add washed spinach and cook until wilted (2-3 minutes). Season with red pepper flakes, black pepper, and salt. Stir in Turkish white cheese if using, then remove from heat and let cool.
  3. Divide rested dough into four balls, roll each into a thin circle. Spoon filling onto half of each circle, fold over, and pinch edges to seal.
  4. In a skillet, melt butter and oil over medium heat. Cook Gozleme for 3-4 minutes per side until golden brown and crispy.
  5. Cut into wedges and serve hot, optionally with yogurt or salad.

Notes

Feel free to customize the filling with leftover veggies or meats. Serve with yogurt, salad, or tzatziki for a refreshing dip.
