A quick and easy Turkish Gozleme recipe that comes together in about 30 minutes, perfect for a fun and delicious weeknight dinner.

- 1 cup lukewarm water
- 3–4 tablespoons milk
- 1 teaspoon salt
- 3 cups all-purpose flour
- 500 grams fresh spinach, thoroughly washed and well-drained
- 2 medium onions, diced
- 1 teaspoon hot red pepper flakes
- 1 teaspoon black pepper
- Salt (to taste)
- 200 grams Turkish white cheese (like feta, optional)
- 3 tablespoons butter and/or vegetable oil
Instructions
- In a large bowl, combine lukewarm water, milk, salt, and flour. Mix until a shaggy dough forms, then knead for 5-7 minutes until smooth and elastic. Let it rest for 15 minutes.
- In a skillet, sauté diced onions in a splash of water over medium heat until translucent (about 5 minutes). Add washed spinach and cook until wilted (2-3 minutes). Season with red pepper flakes, black pepper, and salt. Stir in Turkish white cheese if using, then remove from heat and let cool.
- Divide rested dough into four balls, roll each into a thin circle. Spoon filling onto half of each circle, fold over, and pinch edges to seal.
- In a skillet, melt butter and oil over medium heat. Cook Gozleme for 3-4 minutes per side until golden brown and crispy.
- Cut into wedges and serve hot, optionally with yogurt or salad.
Notes
Feel free to customize the filling with leftover veggies or meats. Serve with yogurt, salad, or tzatziki for a refreshing dip.
