- 1 tablespoon olive oil
- 1 pound Italian sausage (low FODMAP option)
- 4 cups low FODMAP chicken broth
- 2 cups chopped kale
- 1 cup diced potatoes
- 1 cup coconut milk
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the Italian sausage and cook until browned, breaking it into smaller pieces.
- Pour in the chicken broth and bring to a boil.
- Add the diced potatoes and cook until tender, about 10 minutes.
- Stir in the kale and coconut milk until combined.
- Add Italian seasoning, salt, and pepper, then let simmer for another 5 minutes.
- Serve hot, topped with extra pepper or Parmesan if desired.
