Description

A delicious Quick Low FODMAP Tuscan Soup that comes together in about 30 minutes, perfect for a quick and easy weeknight dinner.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (low FODMAP option)
  • 4 cups low FODMAP chicken broth
  • 2 cups chopped kale
  • 1 cup diced potatoes
  • 1 cup coconut milk
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the Italian sausage and cook until browned, breaking it into smaller pieces.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the diced potatoes and cook until tender, about 10 minutes.
  5. Stir in the kale and coconut milk until combined.
  6. Add Italian seasoning, salt, and pepper, then let simmer for another 5 minutes.
  7. Serve hot, topped with extra pepper or Parmesan if desired.
