A delicious Vegan Kale and Mushroom Pizza that comes together in about 30 minutes, perfect for busy weeknight dinners!
Ingredients

- 1 pre-made pizza crust (whole wheat or gluten-free)
- 2 tablespoons olive oil
- 1 cup sliced mushrooms (cremini or button)
- 2 cups chopped kale
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup vegan cheese (optional)
Instructions
- Preheat the oven according to the instructions for your pizza crust (usually around 475°F).
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic for about 1 minute until fragrant.
- Add the sliced mushrooms and cook until soft, about 3-5 minutes.
- Toss in the chopped kale along with dried oregano, salt, and black pepper. Cook until the kale is wilted, about 2-3 minutes.
- Spread the mushroom and kale mixture over the prepared pizza crust.
- If using, sprinkle vegan cheese generously over the top.
- Bake the pizza according to crust instructions (generally about 12-15 minutes) until golden brown and crispy.
- Slice and serve warm.
Notes
This recipe is customizable; feel free to use leftover vegetables or different greens. Store leftovers in an airtight container for up to 3 days.
