Description

Quick and easy Vegan Strawberry Cream Danishes made with flaky puff pastry, creamy coconut filling, and fresh strawberries.


Ingredients

  • 1 sheet vegan puff pastry
  • 1 cup strawberries, sliced
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup coconut cream
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Thaw the puff pastry and roll it out on a floured surface.
  3. Cut the pastry into squares and place them on a lined baking sheet.
  4. In a saucepan, combine strawberries, sugar, and cornstarch. Cook until thickened, about 5-7 minutes.
  5. Mix the coconut cream and vanilla extract until smooth.
  6. Spoon coconut cream onto each pastry square and top with the strawberry mixture.
  7. Fold the edges of the pastry to create a border around the filling.
  8. Bake for 15-20 minutes until the pastry is golden brown.
  9. Allow to cool slightly and dust with powdered sugar before serving.

Notes

Best enjoyed fresh out of the oven. Can be served with coffee or tea.
