Quick and easy Vegan Strawberry Cream Danishes made with flaky puff pastry, creamy coconut filling, and fresh strawberries.

- 1 sheet vegan puff pastry
- 1 cup strawberries, sliced
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/2 cup coconut cream
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat the oven to 400°F (200°C).
- Thaw the puff pastry and roll it out on a floured surface.
- Cut the pastry into squares and place them on a lined baking sheet.
- In a saucepan, combine strawberries, sugar, and cornstarch. Cook until thickened, about 5-7 minutes.
- Mix the coconut cream and vanilla extract until smooth.
- Spoon coconut cream onto each pastry square and top with the strawberry mixture.
- Fold the edges of the pastry to create a border around the filling.
- Bake for 15-20 minutes until the pastry is golden brown.
- Allow to cool slightly and dust with powdered sugar before serving.
Notes
Best enjoyed fresh out of the oven. Can be served with coffee or tea.
