- 1 lb ground beef (or turkey, chicken, or plant-based substitute)
- 1 cup shredded cheddar cheese (or Monterey Jack, Pepper Jack)
- 1/2 cup green onions, chopped
- 1/2 cup shredded carrots
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 10 to 12 egg roll wrappers
- Vegetable oil, for frying
Instructions
- In a skillet over medium heat, cook ground beef until browned, about 5-7 minutes. Drain excess grease.
- Stir in Cajun seasoning and garlic powder with salt and pepper, cooking for another minute until fragrant.
- Let the mixture cool for about 5 minutes.
- In a bowl, combine cooled beef mixture with cheese, green onions, and carrots, mixing thoroughly.
- Lay an egg roll wrapper in a diamond shape and place 2-3 tablespoons of filling in the center. Fold and roll tightly, sealing edges with water.
- Heat vegetable oil in a deep skillet to 350°F (175°C).
- Fry egg rolls in batches until golden brown, about 3-4 minutes. Drain on paper towels.
- Serve hot with your favorite dipping sauce.
