Description

A delicious one-pot dish featuring wild rice, cranberries, and orange zest, perfect for a quick weeknight meal.


Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth or water
  • 1 cup fresh or dried cranberries
  • 1 orange (zested and juiced)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup toasted nuts (optional, for garnish)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Rinse the wild rice under cold water in a fine mesh strainer.
  2. In a medium saucepan, combine the rinsed wild rice and 2 cups of vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45-50 minutes until tender.
  3. In a separate skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
  4. Add the cranberries, orange zest, orange juice, salt, and pepper to the skillet. Cook for 3-4 minutes, stirring occasionally.
  5. Once the wild rice is cooked, fluff with a fork and combine it with the cranberry mixture in the skillet. Stir gently to combine.
  6. Serve warm, garnished with toasted nuts and chopped parsley.

Notes

This dish is customizable; feel free to switch ingredients based on what you have. Great for using up leftovers!
