- 1 cup wild rice
- 2 cups vegetable broth or water
- 1 cup fresh or dried cranberries
- 1 orange (zested and juiced)
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup toasted nuts (optional, for garnish)
- Chopped fresh parsley (for garnish)
Instructions
- Rinse the wild rice under cold water in a fine mesh strainer.
- In a medium saucepan, combine the rinsed wild rice and 2 cups of vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45-50 minutes until tender.
- In a separate skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 4-5 minutes.
- Add the cranberries, orange zest, orange juice, salt, and pepper to the skillet. Cook for 3-4 minutes, stirring occasionally.
- Once the wild rice is cooked, fluff with a fork and combine it with the cranberry mixture in the skillet. Stir gently to combine.
- Serve warm, garnished with toasted nuts and chopped parsley.
