This quick & easy baked lemon pepper chicken is a flavorful weeknight meal that’s family-friendly and requires minimal cleanup.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 large lemon (zested and juiced)
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt (to taste)
  • 1 teaspoon dried thyme (optional)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry with paper towels.
  3. Make the marinade by mixing olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, and salt in a bowl.
  4. Coat the chicken in a baking dish with the marinade.
