- 2 tablespoons olive oil
- 1 large lemon (zested and juiced)
- 2 teaspoons black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt (to taste)
- 1 teaspoon dried thyme (optional)
- Fresh parsley (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- Make the marinade by mixing olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, and salt in a bowl.
- Coat the chicken in a baking dish with the marinade.
- Marinate the chicken for at least 15 minutes.
- Bake the chicken for 25-30 minutes until cooked through and the internal temperature reaches 165°F (75°C).
- Broil for 2-3 minutes if you want a crispy top.
- Rest the chicken for 5 minutes before serving with garnish.
