An incredibly quick and easy one-pot meal featuring chicken and banana peppers in a creamy sauce, perfect for busy weeknights.

- 1 pound chicken breast, cut into bite-sized pieces
- 1 cup banana pepper rings (jarred or fresh)
- 1 cup heavy cream (or Greek yogurt)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Chopped fresh parsley for garnish
Instructions
- Heat the olive oil in a skillet over medium heat.
- Sauté the garlic until fragrant, about 30 seconds.
- Cook the chicken pieces, seasoning with salt and pepper, until golden brown and cooked through, about 6-8 minutes.
- Add the banana pepper rings and cook for another 2-3 minutes until softened.
- Pour in the heavy cream, bring to a simmer, then stir until the sauce thickens slightly.
- Garnish with chopped parsley before serving.
Notes
Feel free to substitute banana peppers with jalapeños or other veggies based on preference. This dish can be served over rice, pasta, or mashed potatoes.
