Description

A quick and easy weeknight meal that the whole family will love, made in one skillet with ground turkey and vibrant veggies.


Ingredients

  • 1 lb ground turkey
  • 2 cups cooked jasmine rice
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 cup chopped red bell pepper
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Cook the rice: Prepare the jasmine rice according to the package instructions, making it nice and fluffy.
  2. Make the sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth.
  3. Heat the skillet: Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. Cook the ground turkey: Add ground turkey, breaking it apart with a spatula. Cook for about 5-7 minutes until browned and cooked through.
  5. Season it: Stir in soy sauce along with salt and pepper.
  6. Add the veggies: Toss in red bell pepper, carrots, and broccoli. Cook for an additional 5-7 minutes until veggies are tender-crisp.
  7. Coat it in sauce: Pour half of the Bang Bang sauce over the turkey and veggies, stirring to coat evenly.
  8. Serve it up: Spoon jasmine rice into bowls, top with the turkey mixture, and drizzle remaining sauce. Garnish with sliced green onions and sesame seeds.
