Description

Quick and easy muffins packed with protein and flavor, perfect for busy mornings or a nutritious snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your muffin tin or use baking liners.
  2. Combine the rolled oats, cottage cheese, eggs, honey (or maple syrup), and vanilla extract in a large bowl. Mix well until smooth.
  3. Whisk together the baking powder, baking soda, and salt in another bowl.
  4. Add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Fold in the blueberries until evenly incorporated.
  6. Scoop the batter into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack.

Notes

These muffins can be frozen for up to 3 months. Wrap individually in plastic and store in a freezer bag.
