Ingredients

  • 1 lb ground chicken
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tablespoon Cajun seasoning
  • 1 cup diced tomatoes
  • 1/4 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 4 brioche buns
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet, heat it up over medium heat. Add the ground chicken and cook until it’s no longer pink, breaking it apart as it sizzles away—this will take about 5-7 minutes.
  2. Next, toss in the onions, garlic, and bell pepper. Cook these until the onion turns translucent and the peppers soften, around 3-4 minutes.
  3. Now, sprinkle in the Cajun seasoning and cook for another minute until it gets all fragrant.
  4. Add the diced tomatoes, chicken broth, Worcestershire sauce, and a couple pinches of salt and pepper. Bring to a simmer, then reduce the heat and let it thicken up for about 10 minutes.
  5. While that simmers, make the cheese topping! Melt the shredded cheddar in a separate saucepan over low heat—give it about 5 minutes.
  6. Now it’s time to toast those brioche buns until golden.
  7. To assemble, pile the Cajun chicken mixture high on the bun bottoms. Drizzle that gooey cheddar on top, then cover them with the other half of the buns.
  8. Serve and enjoy!
