- 1 pound shrimp, peeled and deveined
- 2 tablespoons jerk seasoning
- 8 ounces orzo pasta
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Marinate the shrimp: Toss the shrimp with the jerk seasoning until they’re well-coated. Let it marinate for about 15 minutes.
- Cook the orzo: In a pot of boiling salted water, cook the orzo according to package instructions (around 8-10 minutes). Drain and cool it under cold water.
- Grill the shrimp: Heat your grill to medium-high. Cook the shrimp for 2-3 minutes per side until they turn pink and opaque.
- Mix ingredients: In a large bowl, combine cooked orzo, bell pepper, cherry tomatoes, avocado, red onion, and cilantro.
- Complete the salad: Add the grilled shrimp right on top and mix it all together gently.
- Dress the salad: Whisk together lime juice, olive oil, salt, and pepper. Drizzle it over the salad and toss everything together.
- Serve: You can serve it chilled or at room temperature.
