Description

These easy perfectly chewy granola bars come together in about 30 minutes and require no baking. A perfect snack your family will love!


Ingredients

Scale
  • ⅓ cup honey (or maple syrup for vegan option)
  • ¼ cup unsalted butter (or coconut oil for dairy-free)
  • 1 tablespoon light brown sugar
  • 2 cups rolled oats
  • 1 teaspoon chia seeds (optional)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon fine sea salt
  • ½ cup brown rice cereal
  • ¼ cup dried cranberries (or raisins, blueberries, or chocolate chips)
  • ¼ cup mini chocolate chips (or peanut butter chips)

Instructions

  1. Melt the butter, honey, brown sugar, and salt in a medium saucepan over medium-low heat for 3-4 minutes until melted and bubbly.
  2. Add vanilla extract after removing from heat.
  3. Mix together oats, chia seeds, brown rice cereal, and cranberries in another bowl.
  4. Combine the honey mixture with the dry ingredients until fully coated.
  5. Cool the mixture for 10 minutes and fold in the mini chocolate chips.
  6. Spread the mixture into an 8×8 baking dish lined with parchment paper, pressing down firmly.
  7. Chill in the fridge for at least 2 hours.
  8. Cut into bars and enjoy!

Notes

These granola bars can be customized with various mix-ins and are perfect for meal prep. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
