These easy perfectly chewy granola bars come together in about 30 minutes and require no baking. A perfect snack your family will love!
Ingredients

- ⅓ cup honey (or maple syrup for vegan option)
- ¼ cup unsalted butter (or coconut oil for dairy-free)
- 1 tablespoon light brown sugar
- 2 cups rolled oats
- 1 teaspoon chia seeds (optional)
- 1 teaspoon vanilla extract
- ¼ teaspoon fine sea salt
- ½ cup brown rice cereal
- ¼ cup dried cranberries (or raisins, blueberries, or chocolate chips)
- ¼ cup mini chocolate chips (or peanut butter chips)
Instructions
- Melt the butter, honey, brown sugar, and salt in a medium saucepan over medium-low heat for 3-4 minutes until melted and bubbly.
- Add vanilla extract after removing from heat.
- Mix together oats, chia seeds, brown rice cereal, and cranberries in another bowl.
- Combine the honey mixture with the dry ingredients until fully coated.
- Cool the mixture for 10 minutes and fold in the mini chocolate chips.
- Spread the mixture into an 8×8 baking dish lined with parchment paper, pressing down firmly.
- Chill in the fridge for at least 2 hours.
- Cut into bars and enjoy!
