Description

A cozy one-pot chicken and corn chowder that comes together in about 30 minutes, perfect for a hassle-free weeknight meal.


Ingredients

  • 2 tablespoons butter
  • 1 chopped onion
  • 2 cloves garlic, minced
  • 1 pound cooked chicken breast, shredded
  • 2 cups corn
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Toss in the chopped onion and garlic, sautéing until the onions are soft and translucent—about 3-5 minutes.
  3. Stir in the shredded chicken and corn, warming everything through for about 2 minutes.
  4. Add the chicken broth and bring to a boil.
  5. Reduce the heat and pour in the heavy cream, adding thyme, then bring to a simmer. Let it cook for about 10 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped parsley.
