Description

This easy Chicken Caesar Salad Croissant Sandwich is a delightful and satisfying meal that combines grilled chicken, creamy dressing, and fresh ingredients.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1 lb)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon anchovy paste (optional)
  • Salt and pepper to taste
  • 4 large croissants, halved lengthwise
  • 4 cups romaine lettuce, chopped
  • 1/2 cup freshly grated Parmesan cheese (for topping)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup croutons, lightly crushed
  • 4 strips bacon, cooked and crumbled (optional)

Instructions

  1. Prepare the chicken: Season the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper. Cook in a grill pan over medium-high heat for about 6-7 minutes per side until fully cooked.
  2. Make the dressing: Whisk together mayonnaise, Parmesan cheese, lemon juice, Worcestershire sauce, minced garlic, Dijon mustard, and anchovy paste. Season with salt and pepper to taste.
  3. Assemble the salad: In a mixing bowl, combine chopped romaine, cherry tomatoes, and half of the grated Parmesan. Add sliced chicken and drizzle with dressing, then toss to coat.
  4. Prepare the croissants: Toast the croissants lightly if desired for added crunch.
  5. Make the sandwiches: Fill each croissant half with the salad mixture. Top with remaining Parmesan, croutons, and crumbled bacon if using. Serve immediately.

Notes

For a customizable option, feel free to swap in leftover veggies or omit the chicken for a vegetarian version.
