- Salt and pepper, to taste
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken: Start by seasoning your chicken breasts generously with salt and pepper on both sides. Dredge them lightly in the flour, shaking off any excess.
- Sear the chicken: In a large skillet, heat olive oil and butter over medium heat. Add the chicken and sear for about 5-7 minutes on each side until browned and cooked through.
- Make the sauce: Remove the chicken and set it aside. In the same skillet, pour in the chicken broth, lemon juice, and capers. Bring to a simmer for about 2 minutes, stirring occasionally.
- Return the chicken: Place the chicken back in the skillet and let it soak in the sauce for another 2-3 minutes.
- Garnish and serve: Sprinkle with fresh parsley before serving warm.
