- 1/2 pound of ground chorizo
- 1 cup of melting Mexican cheese (Queso, Oaxaco, or Asadero)
- 1 cup of shredded mozzarella
- 1/3 cup of green onions (chopped)
- 3 cloves of garlic (minced)
- Tortilla chips for dipping
Instructions
- Preheat your oven to broil.
- Cook the ground chorizo and minced garlic over medium heat for about 4-6 minutes until browned. Drain excess grease and season with salt and pepper.
- Mix the melting Mexican cheese and shredded mozzarella in a medium mixing bowl until combined.
- Transfer the cheese mixture to a small cast iron skillet or broiler-safe dish, spreading it evenly.
- Broil for about 2-4 minutes until melted and bubbly.
- Top with the cooked chorizo and chopped green onions.
- Serve immediately with tortilla chips for dipping.
