- 2 tablespoons cooking oil
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, finely chopped
- 2 cups chopped vegetables (bell peppers, carrots, cabbage, etc.)
- 4 tablespoons soy sauce
Instructions
- Cook the chow mein noodles according to the package instructions. Drain and set aside.
- Heat the oil in a large skillet or wok over medium-high heat until hot.
- Add the minced garlic and chopped ginger; sauté for about 30 seconds until fragrant.
- Toss in the chopped vegetables and stir-fry for 2-3 minutes until tender-crisp.
- Combine the cooked noodles with the vegetables and soy sauce; stir-fry for another 2-3 minutes until heated through.
- Serve hot, garnished with green onions or sesame seeds if desired.
