Description

A vibrant and delicious cowboy caviar that requires no cooking, perfect for gatherings or a fun weeknight snack.


Ingredients

  • 1/3 cup avocado oil or vegetable oil
  • 1/3 cup seasoned rice vinegar
  • 1 lime, juiced
  • 3 cloves garlic, minced
  • 1/4 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1 1/4 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chipotle pepper
  • 2/3 cup finely diced red onion
  • 1 1/2 cups diced fresh bell peppers
  • 1/3 cup diced jarred roasted red peppers
  • 1/3 cup diced pickled jalapeño peppers
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 2 cups frozen corn
  • 1 cup diced fresh tomato
  • 1/2 cup chopped fresh cilantro
  • Scoop-style tortilla chips for serving

Instructions

  1. Make the dressing: In a large bowl, whisk together avocado oil, rice vinegar, lime juice, garlic, garlic powder, salt, sugar, cumin, smoked paprika, and chipotle pepper until well combined.
  2. Prep your onions: Rinse the diced red onion under cold running water for about 10 seconds and drain well.
  3. Mix it all up: In the same large bowl, add your bell peppers, roasted red peppers, pickled jalapeños, black beans, black-eyed peas, corn, and tomatoes. Mix well with the dressing.
  4. Time for the onions: Toss in the rinsed red onions, stirring everything together again. Cover and chill in the refrigerator for at least 1 hour.
  5. Final touches: Just before serving, fold in the fresh chopped cilantro and adjust the seasoning with salt and pepper to your taste.
