Description

A quick and easy cranberry chicken salad that comes together in about 15 minutes, perfect for a delicious no-cook meal.


Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1 cup celery, diced
  • Salt and pepper to taste

Instructions

  1. Combine the shredded rotisserie chicken, mayonnaise, and Greek yogurt in a large bowl. Stir until you have a creamy mixture.
  2. Toss in the dried cranberries and chopped pecans, stirring until well coated.
  3. Add the diced celery and mix again. Season with salt and pepper to taste.
  4. Serve on whole-grain bread, atop crackers, or enjoy straight from the bowl.

Notes

Keeps well in the fridge for 3-4 days. Served cold, but can warm the chicken if preferred.
