Ingredients
Scale
- 3 salmon filets (about 1 pound total)
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 tablespoon extra-virgin olive oil
- ½ white onion (diced)
- ½ cup sun-dried tomatoes in oil
- ½ cup cherry tomatoes
- 1 tablespoon minced garlic
- 1 cup heavy cream
- ½ cup freshly shredded Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1 cup fresh baby spinach
- Salt (to taste)
Instructions
- Pat the salmon filets dry. Sprinkle a couple pinches of salt and pepper over the top.
- In a large skillet, heat the olive oil over medium-high heat. Carefully place the salmon in the skillet and sear for about 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside.
- In the same skillet, toss in the diced onion, sun-dried tomatoes, cherry tomatoes, and minced garlic. Cook for about 5 minutes until the onion is translucent.
- Pour in the heavy cream, then sprinkle in the Parmesan cheese, paprika, and Italian seasoning. Stir and let simmer.
- Toss in the baby spinach and stir until wilted, about 2-3 minutes. Return the salmon to the skillet and let simmer for another 5-10 minutes.
- Dish it out warm, pouring the creamy sauce over the salmon.
