A fun and colorful no-bake dessert featuring creamy dragon fruit and a crunchy graham cracker crust.

- 150g graham crackers or digestive biscuits
- 75g melted butter
- 200g cream cheese
- 100ml heavy cream
- 50g sugar
- 1 tsp vanilla extract
- 200g dragon fruit, pureed
- 50g sugar (for jelly)
- 1 tbsp lemon juice
- 10g gelatin
- Fresh raspberries (for garnish)
- Slices of dragon fruit (for decoration)
- Mint leaves (for garnish)
- Dollop of whipped cream (optional)
Instructions
- Preheat your oven to 180°C (350°F).
- Crush the graham crackers or digestive biscuits into fine crumbs and mix with the melted butter. Press into the bottom of a baking dish.
- Bake the crust for about 10 minutes, then let it cool completely.
- Combine the cream cheese, heavy cream, 50g sugar, and vanilla extract in a bowl and beat until smooth.
- In a saucepan over low heat, combine the pureed dragon fruit, sugar, lemon juice, and gelatin until the gelatin dissolves.
- Pour the dragon fruit mixture over the cream cheese layer and refrigerate for at least 2 hours to set.
- Garnish with fresh raspberries, slices of dragon fruit, mint leaves, and a dollop of whipped cream before serving.
Notes
Feel free to experiment with different fruits instead of dragon fruit.
