Description

A fun and colorful no-bake dessert featuring creamy dragon fruit and a crunchy graham cracker crust.


Ingredients

Scale
  • 150g graham crackers or digestive biscuits
  • 75g melted butter
  • 200g cream cheese
  • 100ml heavy cream
  • 50g sugar
  • 1 tsp vanilla extract
  • 200g dragon fruit, pureed
  • 50g sugar (for jelly)
  • 1 tbsp lemon juice
  • 10g gelatin
  • Fresh raspberries (for garnish)
  • Slices of dragon fruit (for decoration)
  • Mint leaves (for garnish)
  • Dollop of whipped cream (optional)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the graham crackers or digestive biscuits into fine crumbs and mix with the melted butter. Press into the bottom of a baking dish.
  3. Bake the crust for about 10 minutes, then let it cool completely.
  4. Combine the cream cheese, heavy cream, 50g sugar, and vanilla extract in a bowl and beat until smooth.
  5. In a saucepan over low heat, combine the pureed dragon fruit, sugar, lemon juice, and gelatin until the gelatin dissolves.
  6. Pour the dragon fruit mixture over the cream cheese layer and refrigerate for at least 2 hours to set.
  7. Garnish with fresh raspberries, slices of dragon fruit, mint leaves, and a dollop of whipped cream before serving.

Notes

Feel free to experiment with different fruits instead of dragon fruit.
