Ingredients

  • 8 all-beef hot dogs
  • 8 soft hot dog buns, lightly toasted
  • ¼ cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh lime juice
  • 1 cup shredded sharp cheddar cheese
  • ½ cup diced red onions
  • ½ cup sliced jalapeños (optional)
  • Fresh cilantro leaves

Instructions

  1. Make the Firecracker Sauce by whisking together mayonnaise, sriracha, honey, smoked paprika, garlic powder, and lime juice until smooth.
  2. Prep the Toppings by dicing onions, slicing jalapeños, shredding cheese, and chopping cilantro.
  3. Heat the grill to medium-high heat (about 400°F).
  4. Grill the hot dogs for about 5-7 minutes, turning occasionally.
  5. Toast the buns cut-side down on the grill for the last 2 minutes until golden.
  6. Assemble the hot dogs by spreading firecracker sauce in each bun, adding a hot dog, then topping with cheese, onions, jalapeños, and cilantro.
  7. Serve immediately while hot!
