- 2 Apples, diced
- 2 Kiwis, diced
- 1 cup Strawberries, diced
- 1 cup Raspberries
- 1/4 cup Brown Sugar
- 2 tablespoons Lemon Juice
- 1/4 cup Fruit Preserves (Strawberry or Apricot)
- 4 Large Tortillas
- 2 tablespoons Cinnamon
- 2 tablespoons Sugar
- Oil for frying (optional)
Instructions
- Prepare the fruit by combining the diced apples, kiwis, strawberries, and raspberries in a large bowl.
- Make the salsa dressing by mixing brown sugar, lemon juice, and fruit preserves in a separate bowl, then pour over the fruit and toss gently.
- Time for the tortilla chips: preheat the oven to 350°F (175°C) if baking, or heat oil in a skillet if frying. Brush tortillas with oil, sprinkle with cinnamon and sugar, and cut them into triangles.
- Bake the tortilla chips on a baking sheet for 10-12 minutes or until golden crisp, or fry until golden brown and crispy.
- Serve the fruit salsa in a bowl with the crispy tortilla chips on the side for dipping.
