Description

A quick and easy summer dessert that features grilled peaches with creamy goat cheese, drizzled with honey.


Ingredients

  • 4 ripe peaches
  • 4 oz goat cheese
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Fresh mint (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Preheat the grill to medium heat, about 350°F to 400°F.
  2. Prep the peaches by cutting each in half and removing the pit. Brush the cut side with olive oil.
  3. Hit the grill by placing peaches cut side down and cooking for 4-5 minutes.
  4. Flip them over and add a generous helping of goat cheese into each half. Grill for another 2-3 minutes until the cheese is soft.
  5. Drizzle with honey and sprinkle with salt and pepper.
  6. Garnish with fresh mint and serve warm.

Notes

Serve as a dessert or alongside vanilla ice cream for a treat. Store leftovers in the fridge for 3-4 days.
