Ingredients

- 4 large potatoes (Russet or Yukon gold)
- 4 cups vegetable oil (canola or peanut oil)
- 1 tablespoon paprika
- 1 tablespoon brown sugar
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper
Instructions
- Slice the potatoes thinly, about 1/8 inch thick.
- Rinse the slices in cold water to remove excess starch.
- Heat the vegetable oil to 350°F (175°C).
- Fry the potato slices in batches for 2-3 minutes until golden brown.
- Drain the chips on paper towels.
- Mix the seasoning in a medium bowl.
- Season the warm chips with the seasoning mixture.
Notes
Store in an airtight container for up to a week. For freshness, re-crisp in the oven at 350°F (175°C).
