- 1 ½ cups sharp cheddar cheese, freshly grated
- 1 cup all-purpose flour
- 4 tablespoons cold unsalted butter, cubed
- ½ teaspoon salt
- ¼ teaspoon paprika (optional)
- 2–3 tablespoons cold water
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, salt, and paprika in a large bowl until evenly combined.
- Cut the cold butter into the flour mixture until it resembles coarse crumbs.
- Stir in the cheddar cheese until well combined.
- Gradually add cold water, mixing until the dough just comes together.
- Turn the dough onto a floured surface and pat it into a rectangle about ½ inch thick.
- Roll the dough to about ¼ inch thick and cut into squares or rectangles.
- Poke holes in each cracker to prevent puffing using a fork.
- Place on a baking sheet lined with parchment paper and bake for 12-15 minutes or until golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
