Description

A sweet and savory dish that combines chicken, sweet potatoes, and green beans, all in one pan for a quick and easy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 1 pound green beans, trimmed
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Whisk together honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and pepper in a small bowl until combined.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes or up to 8 hours.
  3. Preheat the oven to 400°F (200°C).
  4. Spread the sweet potatoes on a lined baking sheet, drizzle with olive oil, season with salt and pepper, and roast for about 15 minutes.
  5. Add marinated chicken and green beans to the baking sheet, drizzling with leftover marinade.
  6. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F and sweet potatoes are tender.
  7. Let it rest for a few minutes before serving hot.

Notes

This dish can be served with a green salad, crusty bread, rice, or quinoa. Leftovers can be stored in the refrigerator for 3-4 days or frozen for about 3 months.
