- 2 boneless, skinless chicken breasts
- 1 cup mango puree
- ¼ cup soy sauce
- ⅓ cup honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper, to taste
- 1 tablespoon cooking oil (sesame oil preferred)
- Green onions, for garnish
- Sesame seeds, for garnish
Instructions
- Preheat your oven to 400°F (200°C) or heat a skillet over medium-high heat.
- Whisk together the mango puree, soy sauce, honey, garlic, ginger, salt, and pepper until well combined.
- Option 1 – Oven-Baked: Place chicken on a lined baking sheet, brush with mango glaze, and bake for 20-25 minutes until cooked through.
- Option 2 – Skillet-Seared: In a skillet, heat oil, add chicken, and sear for 6-7 minutes on each side. Brush with remaining glaze and cover, cooking for another 5 minutes.
- Remove from heat, let rest for a few minutes, and garnish with green onions and sesame seeds before serving.
Notes
Customize by adding your favorite vegetables or using different proteins. Ideal for meal prep and can be served over rice or quinoa.
