Description

A deliciously easy mango mochi that comes together in about 30 minutes, perfect for a quick and delightful treat for any occasion.


Ingredients

Scale
  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 1/2 cup water
  • 1 ripe mango
  • 1 cup cornstarch
  • Pinches of salt

Instructions

  1. Make the mango puree by peeling and chopping the mango, then blending until smooth.
  2. Combine the glutinous rice flour and sugar in a bowl, then add water and half of the mango puree; mix until thick and sticky.
  3. Prepare a steamer and pour the mochi mixture into it; steam for about 20 minutes until it sets.
  4. Cool the mochi slightly, then dust with cornstarch, knead until smooth and fill with the reserved mango puree.
  5. Serve fresh, optionally rolled in cornstarch, with sweetened condensed milk or fresh fruit.

Notes

Mochi can be customized with various fruit fillings or toppings. Leftovers can be stored in the fridge for 3-5 days.
