- 1/4 cup matcha powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 tablespoon matcha powder (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- Sift together the flour, matcha powder, baking powder, and salt in a bowl.
- Whisk the eggs and granulated sugar together until light and fluffy.
- Add the dry ingredients to your egg mixture, alternating with the milk and vegetable oil.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 12-15 minutes or until a toothpick comes out clean.
- Allow the cake to cool slightly, then turn it out onto a powdered sugar-dusted kitchen towel.
- Roll the cake up with the towel starting from the short end and let it cool completely.
- Whip the heavy whipping cream and powdered sugar until soft peaks form, then add matcha powder.
- Unroll the cake gently and spread the matcha whipped cream evenly across the surface.
- Roll it back up without the towel.
- Slice and serve your matcha roll cake.
