Description

A delicious no-bake dessert featuring creamy mini cheesecakes with a refreshing kiwi topping, perfect for the whole family!


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 kiwis, peeled and sliced

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix together graham cracker crumbs, sugar, and melted butter until combined, and press into the bottom of individual cheesecake molds.
  3. Beat cream cheese with an electric mixer until smooth, add powdered sugar and vanilla extract; mix until combined.
  4. Add eggs one at a time and mix until blended and fluffy.
  5. Pour the cream cheese mixture over the crusts in the molds, filling them about three-quarters full.
  6. Bake for 20-25 minutes until the centers are set.
  7. Cool completely and refrigerate for 2 hours.
  8. Top with sliced kiwi and serve cold.

Notes
