- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 kiwis, peeled and sliced
Instructions
- Preheat your oven to 325°F (160°C).
- Mix together graham cracker crumbs, sugar, and melted butter until combined, and press into the bottom of individual cheesecake molds.
- Beat cream cheese with an electric mixer until smooth, add powdered sugar and vanilla extract; mix until combined.
- Add eggs one at a time and mix until blended and fluffy.
- Pour the cream cheese mixture over the crusts in the molds, filling them about three-quarters full.
- Bake for 20-25 minutes until the centers are set.
- Cool completely and refrigerate for 2 hours.
- Top with sliced kiwi and serve cold.
Notes
