- 1 lb refrigerated pizza dough
- 2 quarts water
- 1/2 cup baking soda
- 1 large egg, beaten
- 1 tsp coarse sea salt
- 1/2 cup shredded low-moisture mozzarella cheese
- 1/4 cup finely grated Parmesan cheese
- 32 slices mini pepperoni
- 1 tsp dried oregano
- 1 cup warm marinara sauce
Instructions
- Preheat your oven to 425°F (220°C) and line two large baking sheets with parchment paper.
- Boil the water: In a wide pot, bring 2 quarts of water to a rolling boil, then whisk in the baking soda.
- Roll out the pizza dough on a floured surface into a rectangle and cut into 32 equal squares.
- Assemble the bites by placing a slice of mini pepperoni and a pinch of mozzarella in the center of each square.
- Roll the dough squares into balls, pinching the corners together.
- Boil 5-6 bites in the boiling water for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets.
- Finish by brushing the bites with the beaten egg and sprinkling with sea salt, Parmesan cheese, and oregano.
- Bake for 10-12 minutes until golden brown.
- Cool for about 3 minutes, then serve with warm marinara sauce.
