Description

Delicious mini pizza bites that come together in about 30 minutes, perfect for busy weeknights and customizable with your favorite toppings.


Ingredients

Scale
  • 1 lb refrigerated pizza dough
  • 2 quarts water
  • 1/2 cup baking soda
  • 1 large egg, beaten
  • 1 tsp coarse sea salt
  • 1/2 cup shredded low-moisture mozzarella cheese
  • 1/4 cup finely grated Parmesan cheese
  • 32 slices mini pepperoni
  • 1 tsp dried oregano
  • 1 cup warm marinara sauce

Instructions

  1. Preheat your oven to 425°F (220°C) and line two large baking sheets with parchment paper.
  2. Boil the water: In a wide pot, bring 2 quarts of water to a rolling boil, then whisk in the baking soda.
  3. Roll out the pizza dough on a floured surface into a rectangle and cut into 32 equal squares.
  4. Assemble the bites by placing a slice of mini pepperoni and a pinch of mozzarella in the center of each square.
  5. Roll the dough squares into balls, pinching the corners together.
  6. Boil 5-6 bites in the boiling water for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheets.
  7. Finish by brushing the bites with the beaten egg and sprinkling with sea salt, Parmesan cheese, and oregano.
  8. Bake for 10-12 minutes until golden brown.
  9. Cool for about 3 minutes, then serve with warm marinara sauce.
