- 2 cups orzo pasta
- 1 tablespoon Cajun seasoning
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil over medium heat in a large pot. Add the diced chicken, sprinkle with Cajun seasoning, salt, and pepper.
- Cook until the chicken is browned and cooked through, about 5-7 minutes, stirring occasionally.
- Add the orzo pasta and chicken broth; stir to combine.
- Bring to a boil, then reduce heat to medium-low and cover. Let simmer for 10-12 minutes until orzo is cooked al dente.
- Stir in the heavy cream and Parmesan cheese until melted and creamy.
- Remove from heat and let sit a few minutes to thicken.
- Garnish with fresh parsley and serve warm.
