Description

This flavorful dish combines tender chicken thighs with a creamy peanut butter sauce, perfect for a quick weeknight dinner.


Ingredients

  • 1 pound Chicken Thighs
  • 1/2 cup Peanut Butter
  • 1/4 cup Soy Sauce
  • 2 tablespoons Honey
  • 1 Egg
  • 1 cup Breadcrumbs
  • Salt and Pepper to taste
  • Vegetable Oil for Frying

Instructions

  1. Preheat about 1/4 inch of vegetable oil in a large frying pan over medium-high heat.
  2. Combine 1/2 cup peanut butter, 1/4 cup soy sauce, and 2 tablespoons honey in a mixing bowl. Stir until smooth.
  3. Coat the chicken thighs in the marinade, ensuring every inch is covered. Let marinate for at least 10 minutes.
  4. Beat 1 egg in a shallow dish, and in another dish, mix 1 cup breadcrumbs with salt and pepper.
  5. Dip each marinated chicken thigh in the egg, then coat in seasoned breadcrumbs.
  6. Fry the chicken thighs in the hot oil for about 4-5 minutes on each side until golden brown and cooked through.
  7. Remove the chicken and let it drain on paper towels. Serve immediately, drizzled with extra peanut sauce if desired.

Notes

Serve over steamed rice or with stir-fried veggies. Leftovers can be stored in an airtight container for up to 3 days.
