Instructions
- Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
- Cream the butter and sugar together in a large bowl for about 3-5 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Combine the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the buttery mixture, alternating with the milk, until just combined.
- Stir in the vanilla extract and dragon fruit puree until well mixed.
- Divide the batter evenly among the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Cool the cakes in their pans for about 10 minutes, then transfer to wire racks to cool completely.
- Layer the cakes with buttercream frosting and top with fresh fruit if desired.
