Description

Ingredients

  • 2 cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup pureed dragon fruit (pink variety)
  • Buttercream frosting (for layering and decorating)
  • Fresh fruit (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
  2. Cream the butter and sugar together in a large bowl for about 3-5 minutes until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Combine the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the buttery mixture, alternating with the milk, until just combined.
  6. Stir in the vanilla extract and dragon fruit puree until well mixed.
  7. Divide the batter evenly among the prepared pans.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Cool the cakes in their pans for about 10 minutes, then transfer to wire racks to cool completely.
  10. Layer the cakes with buttercream frosting and top with fresh fruit if desired.
