Delicious cookie bars made with salted caramel and brown sugar, perfect for a quick family treat.

- 1 cup unsalted butter, softened
- 1.5 cups packed light brown sugar
- 0.5 cup granulated sugar
- 2 large eggs, room temperature
- 2.5 cups all-purpose flour
- 1 tsp baking soda
- 0.5 tsp salt
- 1 tsp vanilla extract
- 1 cup salted caramel sauce
- Sea salt flakes for sprinkling
- 1 cup powdered sugar
- 2 tbsp whole milk or cream
- 1 tsp ground cinnamon
- 0.5 tsp vanilla extract for the glaze
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together 1 cup of softened unsalted butter, 1.5 cups packed light brown sugar, and 0.5 cup granulated sugar until light and fluffy—about 2-3 minutes.
- Add in 2 room temperature eggs and 1 tsp of vanilla extract. Mix until smooth.
- Whisk together 2.5 cups all-purpose flour, 1 tsp baking soda, 0.5 tsp salt, and 1 tsp ground cinnamon in a separate bowl.
- Combine the dry ingredients into your wet mixture.
- Fold in 1 cup of salted caramel sauce.
- Prepare a 9×13-inch baking dish by greasing it and pouring in the dough, spreading it evenly.
- Bake for 20-25 minutes until edges are golden and a toothpick comes out clean.
- Cool in the pan on a wire rack for 10-15 minutes.
- Whisk together 1 cup of powdered sugar, 2 tbsp of whole milk or cream, and 0.5 tsp vanilla extract for the glaze.
- Drizzle the glaze over the cooled cookie bars, and sprinkle with sea salt flakes.
- Slice into squares and serve.
Notes
Serve with a scoop of vanilla ice cream for an extra treat.
