Description

A quick and flavorful meal made entirely on a single sheet pan, perfect for busy weeknights.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 bell peppers, thinly sliced
  • 1 medium red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons chili powder
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons paprika (optional)
  • 1 ½ teaspoons onion powder
  • 2 teaspoons kosher salt
  • 1 lime, for serving
  • ½ cup cilantro, chopped (optional)
  • Flour tortillas, to wrap

Instructions

  1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. Combine the shrimp, sliced bell peppers, and red onion in a large bowl. Drizzle with olive oil and sprinkle with spices.
  3. Toss everything together until well-coated.
  4. Spread the mixture on the prepared sheet pan in a single layer.
  5. Roast in the oven for about 12 to 13 minutes until shrimp are pink and opaque.
  6. Squeeze fresh lime juice over the mixture and sprinkle with cilantro.
  7. Serve hot with warm flour tortillas and your choice of toppings.

You can customize the recipe by swapping shrimp for chicken or using different vegetables.
