A creamy and flavorful Southwest Corn Dip that can be served hot or cold, perfect for gatherings or casual snacking.
Ingredients

- 30 oz Southwest Corn w/ Poblano and Red Peppers (2 cans)
- 1 cup Shredded Cheddar Cheese
- 1/2 tsp Taco Seasoning
- 2 tbsp Sour Cream
- 1/2 cup Mayo
- 1/2 cup Cream Cheese
- 4 Green Onions (chopped, reserve some for garnish)
- 14 oz Tortilla Chips (for dipping)
Instructions
- Add Corn to Bowl: Drain the excess liquid from the cans of southwest corn and then dump the delicious corn into a large mixing bowl.
- Blend Together Dip Ingredients: Now, add the shredded cheddar cheese, taco seasoning, sour cream, mayo, cream cheese, and chopped green onions (remember to reserve some for garnish!). Toss it all together until it’s well mixed and creamy—a couple of pinches of salt and pepper won’t hurt either!
- Serve with Chips: Spoon that tasty dip into a serving bowl. Grab your platter, arrange those tortilla chips around the bowl, and sprinkle the reserved chopped green onions on top of the dip for that gorgeous garnish. Voilà! Time to dig in!
Notes
Customize by adding jalapeños, black beans, or other leftover ingredients. Best served fresh but can be refrigerated for 3-4 days.
