Description

Ingredients

  • 1 cup mochiko (sweet rice flour)
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup milk (whole or almond)
  • 1 tablespoon melted butter
  • Butter or oil for cooking

Instructions

  1. Combine the wet ingredients: In a bowl, whisk together the ube puree, sugar, and eggs. Mix until combined—about 1-2 minutes should do!
  2. Mix the dry ingredients: In another bowl, whisk together the mochiko, baking powder, and salt until well distributed.
  3. Combine the mixtures: Gradually add the dry ingredients to the ube mixture, alternating with the milk until smooth.
  4. Get your skillet ready: Heat a non-stick skillet over medium heat and coat it with butter or oil.
  5. Scoop the batter: Using a 1/4 cup measuring scoop, pour the batter onto the skillet, cooking a few pancakes at a time.
  6. Cook to perfection: Cook until bubbles form on the surface—about 3-4 minutes. Then flip and cook until golden brown, another 2-3 minutes.
  7. Serve warm: Enjoy them topped with syrup, whipped cream, or fresh fruit.
