Description

A refreshing summer side salad featuring sweet watermelon and crisp cucumber, perfect for barbecues or quick dinners.


Ingredients

  • 3 cups watermelon, cubed
  • 2 cups cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Combine the cubed watermelon, diced cucumber, thinly sliced red onion, and crumbled feta cheese in a large bowl.
  2. Drizzle the olive oil and fresh lime juice over the mixture.
  3. Toss in the chopped fresh mint, and then season with salt and pepper.
  4. Gently toss all ingredients together until evenly coated.
  5. Serve chilled or refrigerate for about 30 minutes to let flavors meld.
