Description

A scrumptious one-pot meal that comes together in about 30 minutes, perfect for a quick weeknight dinner.


Ingredients

Scale
  • 2 medium Sweet Potatoes, chopped
  • 2 cups cooked Chicken, shredded or diced
  • 1 cup BBQ Sauce
  • 1 Red Onion, chopped
  • 1 cup Corn (frozen or canned, drained)
  • 1 cup Cheddar Cheese, shredded
  • 1 tablespoon Olive Oil
  • Salt & Black Pepper, to taste
  • 1 teaspoon Smoked Paprika
  • Green Onions, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sweet potatoes, sprinkle with salt and pepper, and sauté about 10-12 minutes until tender.
  3. Toss in the diced red onion and cook for an additional 3-5 minutes.
  4. Stir in corn and shredded chicken, then pour in BBQ sauce and mix well.
  5. Cook until heated through, about 4 minutes, then reduce heat to low.
  6. Sprinkle cheddar cheese on top, cover, and let sit for 2 minutes to melt.
  7. Garnish with chopped green onions before serving.

Notes

This dish is flexible; swap ingredients to fit your taste. Serve with a side salad or cornbread for a complete meal.
