A quick and easy weeknight meal, this flavorful Mississippi Pot Roast comes together in under 10 minutes of prep and is perfect for cozy family dinners.
Ingredients

- 3–4 pounds Chuck Roast
- 1/2 cup Butter
- 1 packet Mississippi Dressing Mix
- 5–6 Pepperoncini Peppers
- Potatoes, quartered (Yukon Gold or red)
- Carrots, sliced
- 1 large Onion, chopped
- 1 cup Beef Broth
Instructions
- Season the roast with salt and pepper; sear if desired.
- Prepare the slow cooker and place in the roast.
- Add the chopped onions, quartered potatoes, sliced carrots, and pepperoncini on top.
- Butter the roast and veggies with slices of butter.
- Pour in the beef broth to cover the ingredients.
- Cook on low for 8 hours or high for 4 hours until fork-tender.
- Shred the meat and stir everything together before serving.
