Description

A flavorful and quick cauliflower fried rice made in one pot, perfect for busy weeknight dinners.


Ingredients

Scale
  • 1015 oz bag frozen cauliflower rice
  • 2 tbsp olive oil
  • 1/2 yellow or white onion (diced)
  • 2 medium carrots (diced)
  • 1 tbsp minced garlic
  • 1/2 cup frozen peas
  • 2 eggs
  • 1 tsp toasted sesame oil
  • 2 tbsp soy sauce
  • Toasted sesame seeds for garnish (optional)

Instructions

  1. Cook the cauliflower rice according to package directions and set aside.
  2. Sauté the onions and carrots in olive oil over medium-high heat for about 5 minutes.
  3. Mix in the garlic and peas, cooking for another minute until fragrant.
  4. Stir in the cauliflower rice and scrape the bottom of the pan.
  5. Scramble the eggs in the center of the pan until fully cooked, about 1-2 minutes.
  6. Add the sesame oil and soy sauce, mixing thoroughly to combine.
  7. Serve warm, garnished with toasted sesame seeds if desired.
