Description
A flavorful and quick cauliflower fried rice made in one pot, perfect for busy weeknight dinners.
Ingredients

- 10–15 oz bag frozen cauliflower rice
- 2 tbsp olive oil
- 1/2 yellow or white onion (diced)
- 2 medium carrots (diced)
- 1 tbsp minced garlic
- 1/2 cup frozen peas
- 2 eggs
- 1 tsp toasted sesame oil
- 2 tbsp soy sauce
- Toasted sesame seeds for garnish (optional)
Instructions
- Cook the cauliflower rice according to package directions and set aside.
- Sauté the onions and carrots in olive oil over medium-high heat for about 5 minutes.
- Mix in the garlic and peas, cooking for another minute until fragrant.
- Stir in the cauliflower rice and scrape the bottom of the pan.
- Scramble the eggs in the center of the pan until fully cooked, about 1-2 minutes.
- Add the sesame oil and soy sauce, mixing thoroughly to combine.
- Serve warm, garnished with toasted sesame seeds if desired.
